Description

Vulcaia Fumé is a wine produced with the aim of making the Soave area known through an interpretation of Sauvignon. This one-of-a-kind wine is made from 100% Sauvignon grapes grown at an altitude of 150 meters above sea level on lava basalt soils.

Winemaking begins with manual harvesting, once in the cellar, the bunches are cooled for a few hours and then destemmed. This is followed by cold maceration for 3-6 hours, after which the must undergoes alcoholic fermentation in French oak barriques with strong toasting. The maturation of the wine lasts 6 months with periodic bâtonnage, before aging in steel and bottling in November.

Vulcaia Fumé stands out for its nose with hints of coffee, spices and flower petals. On the palate, notes of tropical fruit, citrus and significant aromatic complexity emerge. The finish is long and persistent, enriched by toasted and smoky hints that reflect the use of barrique and the character of the volcanic soils of the production area.

Thanks to its strong personality, Vulcaia Fumé is ideal in combination with tasty fish dishes, white meats or mature and blue cheeses.
