Picàie by Cecilia Beretta, a brand of the Pasqua winery, is a refined and elegant red wine, an authentic expression of the winemaking tradition of Eastern Valpolicella. The grapes come from deep, limestone soils that give the wine structure and complexity. The name recalls the ancient practice of hanging the grape clusters in attics for drying, a technique that enriches the wine's sensory profile.
The winemaking process involves the manual selection of grapes, followed by a drying period of around two months. Fermentation occurs in stainless steel at a controlled temperature for 20 days, followed by malolactic fermentation that enhances its softness. The wine matures for 18 months in oak barriques and tonneaux, completing its aging in bottle for another six months, enhancing its structure and balance.
With an intense ruby red color, the bouquet opens with delicate floral notes, enriched by hints of dried fruit, raisins, vanilla, and sweet spices. On the palate, it is powerful and enveloping, with soft tannins and a persistent finish that recalls the nuances of drying.
This red wine perfectly pairs with robust red meats, game, and aged cheeses, enhancing their flavors with its intense and harmonious character.
