Carménère “Più” was born in the Berici Hills area of Vicenza and from the challenge of focusing on a little-known red grape variety from Bordeaux which in the past was often confused with Cabernet Franc. This Veneto red wine combines Carmènére and Merlot grapes, grown at an altitude between 50 and 150 meters above sea level, on soils of red clay and marine limestone, with southern exposure. Carménère is an ancient French variety, which arrived in Veneto in the second half of the nineteenth century, which has adapted very well to the territory and climate, but which has always been somewhat sacrificed by the great commercial success of Merlot and Cabernet Sauvignon . The soils were generated by an ancient phenomenon of bradyseism, which led to the emergence of a rocky ridge of karst limestone, covered by red soil, rich in iron oxides, of a clayey and silty nature.
The grapes, harvested by hand, are delicately destemmed so as not to break the skin of the grapes. The alcoholic fermentation takes place in steel for approximately 20-25 days at a controlled temperature not exceeding 26°C. After malolactic fermentation, the wine ages for 12 months in third and fourth passage barriques and in steel. Subsequently, it is assembled and aged in steel for 4 months before bottling, and a further 6 months in the bottle before marketing. The label offers a cuvée made with a higher percentage of Carménère, made more harmonious, soft and pleasantly fruity by the presence of Merlot.
Carménère Più has a dark red color with blue-purple reflections. On the nose it offers elegant notes of red berries and spicy hints of cocoa and black pepper. On the palate it is balanced, excellent freshness and fruity.
Perfect to accompany typical Venetian cured meats such as sopressa and garlic salami, this red wine is ideal in combination with grilled pork.
