Description

Zýmé 's Cabernet 602020 comes from vineyards located in the Vicenza area of Lonigo, on the Berici Hills. The numbers 60 20 and 20 correspond to the percentages of the different varieties that make up the blend from which this Cabernet is obtained.

It is produced with Cabernet Sauvignon, Cabernet Franc and Merlot grapes, meticulously harvested by hand between the end of September and the beginning of October. After the Merlot grapes have dried for 20-30 days in the fruit cellar, fermentation takes place in cement tanks at natural temperature for 40 days. Subsequently the wine ages in new barriques for at least 24 months and for another 12 months in bottle, before being placed on the market.

Cabernet 602020 by Zýmé is characterized by a red color tending to purple, with garnet reflections with aging. The nose opens with aromas of blueberry, black currant and wild blackberries, enriched with notes of musk and spices. On the palate it is powerful, enveloping and complex, well balanced with notes of plum jam and fruits of the undergrowth that leave room for delicate notes of pepper, perennial herbs and clay soil.

Perfect to accompany roasts and grilled red meats, it is ideal in combination with medium-aged cheeses.
