The Sassella Ultimi Raggi by ArPePe is made exclusively from Chiavennasca (Nebbiolo) grapes, grown on herbaceous vineyards facing southwest, located at an altitude of 600 meters. This wine represents a unique expression of mountain Nebbiolo, produced with a late harvest that allows for the concentration of aromas and structure, giving it a deep and exciting sensory profile.
The winemaking process involves a long maceration of 114 days in wooden vats, followed by aging for 42 months in large wooden casks, cement, and bottle. This lengthy process allows the wine to develop great complexity and harmony while maintaining the freshness typical of the Valtellina territory.
In appearance, it presents an intense garnet red color. The bouquet is wide and enveloping, with notes of ripe fruit, sweet spices, alpine herbs, and mineral nuances. On the palate, it is deep and structured, with silky tannins and a perfect balance between concentration and finesse. The finish is long and persistent, with extraordinary elegance that reveals itself sip after sip.
It pairs perfectly with braised meats, game, and aged cheeses, enhancing their complexity and character with its extraordinary aromatic profile.
