Description
The Valpolicella Superiore Mai Dire Mai by Pasqua is an authentic expression of the terroir of the Montevegro vineyard, located between the Val d’Illasi and the Val di Mezzane at an altitude of 350 meters. The basaltic and limestone soil gives minerality and elegance to this wine, which is crafted from a blend of Corvina, Corvinone, Rondinella, and Oseleta, varieties that impart complexity and structure.
The grapes are handpicked with careful selection and subjected to a gentle pressing. Fermentation takes place at a controlled temperature between 20-22°C, followed by an 18-month maturation in French oak barrels, primarily using new or second-use wood. This long aging allows the wine to develop a rich and intricate aromatic profile.
On the nose, it presents intense and ethereal aromas, with elegant hints of tobacco, cedar, underbrush, and balsamic notes. On the palate, it is warm and enveloping, with flavors of morello cherry, cloves, and coffee, supported by very fine and well-integrated tannins. The bold structure, vibrant acidity, and long finish with spicy echoes make it a wine of great personality.
This red wine pairs perfectly with grilled meats, game, and aged cheeses, enhancing their flavors with its elegance and complexity.
