From the vineyards of the Tenuta di Tregnago, in the upper Val d'Illasi, Mezzane di Sopra and the hill of Tregnago and from a blend of Corvina between 55% and 65%, Corvinone between 25% and 35% and Rondinella between 5 Ripasso Monte Zovo is born at 15%, a precious expression of the Classic Valpolicella. The calcareous and marly soil gives the wine personality, appearance and character. The harvest begins at the end of September, with the manual collection and selection of the grapes, the best ones, which will be de-stemmed and crushed before starting the fermentation in stainless steel. Alcoholic fermentation follows which lasts about 15 days at a controlled temperature of 20-24 ° C. Afterwards, the wine is separated from the skins by means of a soft press and stored in steel tanks until the dried grapes are pressed for the production of Amarone. At this point the wine is "Passed" on the Amarone marc with a stay of 15 days at a controlled temperature of 24 ° C. The aging lasts 24 months in tonneaux and vats.
Intense red color with garnet reflections, it emanates hints of blackberry, cherry and raspberry on the nose. Floral sensations of geranium and violet emerge followed by the roasted smell of coffee, leather and plum. The sip is soft, balanced in freshness and with a dense tannic texture.
Perfect to accompany grilled meats, it will simply be sublime in combination with savory pasta dishes with sausage. Try it with pumpkin-filled tortelli.
