Description
The Valpolicella Ripasso Superiore I Saltari from the Sartori winery in Verona is produced in the hilly area of Val d'Illasi, from a 6-hectare vineyard located 230 meters above sea level. The vines, with an average age of about 20 years, grow on a calcareous-clayey soil with volcanic origins. The excellent exposure and temperature range contribute to the quality of the grapes, which include Corvina, Corvinone, Rondinella and Croatina.
The vinification involves a soft pressing of the grapes followed by a fermentation of 8-10 days at a controlled temperature. Then the wine is passed over the Amarone marc, triggering a second fermentation that gives greater softness and structure. After malolactic fermentation it matures for 36 months in wooden barrels of different sizes and rests further for 6 months in the bottle before being released for sale.
Of an intense red color, it opens to the nose with a broad and persistent bouquet, characterized by notes of small red fruits and spices. On the palate it is soft, velvety and well-balanced, with hints of ripe fruit and delicate hints of chocolate that enhance its pleasant drinkability.
This red wine pairs perfectly with tasty first courses such as mushroom risotto, as well as grilled meats, roasts, game, cured meats and medium-aged cheeses.
