Description
The Valpolicella Ripasso Superiore Vintage Edition of the Venetian company Sartori di Verona was born on the vineyard hills of Valpolicella, where the company has been producing wine for four generations.
The grapes (Corvina Veronese, Corvinone, Rondinella, Croatina) arrived in the cellar are subjected to crushing-destemming, followed by fermentation at a controlled temperature for 8-10 days. During the second fermentation the so-called "ripasso" of the wine takes place on the Amarone pomace in the month of February. This process favors the extraction of tannins and the typical aromas of this wine. The refinement also includes a passage in medium and large barrels for about 12-18 months. Before being marketed, the wine rests in the bottle for at least 6 months.
Bright garnet red wine, with intense aromas of red fruit in alcohol, sweet spices and mentholated balms. On the palate the wine is intense and velvety, with flavors of ripe cherry, red plum and a hint of cinnamon.
The wine goes well with risotto with mushrooms, grilled meats, roasts.
