Description
Valpolicella Superiore Ripasso is a wine with a long winemaking tradition, composed of the Corvina, Corvinone and Rondinella vines.
After a phase of crushing-destemming, the must ferments at a controlled temperature of 22-28 ° C with maceration on the skins for 12 days. A second fermentation on the pomace of Torre del Falasco Amarone follows, then refines for at least 12 months in Slavonian oak barrels.
In the glass it is endowed with a beautiful intense ruby red color. The nose tells of fruits from the undergrowth and jam. On the palate it is soft and balanced, with clear and precise references of oak at the end of the mouth.
It prefers medium-long-aged cheeses and game, above all hare.
