Description
Valpolicella Ripasso Superiore by Cesari is a red wine produced with Corvina, Corvinone, Rondinella and Molinara grapes from different areas of Valpolicella Classica, in Veneto. The vineyards, which extend over a surface of 70 hectares, are cultivated on calcareous soils of alluvial-moraine origin.
The "ripasso" technique is a traditional Valpolicella practice, which consists of refermenting the wine on the fermented pomace of dried grapes used to produce Amarone. This process enriches the wine with aromas, tannins and color, giving it greater structure and complexity.
This wine has an intense red color with garnet reflections. The nose perceives notes of dried red fruits and spices, along with hints of salted cherries. On the palate this red wine is medium-bodied, with a silky and juicy finish.
This Valpolicella Ripasso Superiore pairs perfectly with white and red meat dishes.
