Description
Valpolicella Ripasso Classico Superiore Montecorna by Farina is a wine produced exclusively from native grapes from the hills of Valpolicella Classica. The main grape varieties include Corvina, Corvinone, Rondinella and Molinara. The vineyard is located in an area characterized by calcareous soils stratified with basalts, at an altitude of about 300 meters above sea level.
The vinification involves a light drying of the grapes, followed by a fermentation with cold maceration. The resulting wine is then subjected to the traditional "ripasso" method, which consists of a second fermentation on the Amarone pomace. It is then refined for a year, half in Slovenian oak barrels and half in barriques, before being further refined in the bottle.
With an intense ruby red color, this wine presents a complex bouquet of black cherry and plum jam, enriched by spicy notes of vanilla, leather and toasted coffee. On the palate it is enveloping, compact, but at the same time refined and harmonious, with a good structure and a long and persistent finish.
It pairs perfectly with grilled meats, roasts and stews rich in aromatic herbs. Also ideal with pasta dishes and risottos based on sausage, pumpkin or porcini mushrooms.
