Description
The Valpolicella Ripasso Classico Superiore La Cengia di Begali is produced in the province of Verona, in the municipality of San Pietro in Cariano.
Set in the Valpolicella Classica, the Begali winery produces this version of Ripasso through a blend of great territoriality: 65% of the Corvina variety, 30% of Corvinone and a remaining 5% of native grapes. The vineyards are located in the surroundings of the municipality of Cengia, in a hilly area. The bunches are selected, collected and transported to the cellar. Here they are vinified by applying the ripasso technique, that is, during the racking phase, the wine is fermented (from here, ripassare) on the exhausted pomace of Amarone or Recioto. This practice brings a character of aromatic complexity and structural thickness superior to that of a normal Valpolicella. At the end of its journey, the wine ages in oak barrels for at least a year. A further maturation period in the bottle makes it ready for marketing.
At sight it has a ruby red color with garnet reflections. The scent is intense and vinous, in which notes of berries and cherry, followed by dried flowers and eucalyptus. On the palate it is firm and dry, pleasantly soft.
Perfect to combine with a beef goulash, also spiced.
