Description

Valpolicella Ripasso Classico Superiore from the Farina company is a structured red wine, produced following the local tradition. The grapes come from the hills of San Pietro in Cariano and Sant'Ambrogio di Valpolicella and include Corvina, Corvinone, Rondinella, Molinara and Oseleta.

The vinification involves cold maceration on the skins, followed by fermentation in stainless steel at 28°C with daily pumping over. The wine is then subjected to the ripasso technique to start a second fermentation, which gives it more body. It is then refined in Slavonian oak barrels and in the bottle.

Ruby red in color, it releases intense aromas of pepper, leather, cherry jam and plums on the nose, with hints of licorice and ginger. On the palate it is well structured, vigorous and harmonious, with a pleasant persistence.

It is ideal when paired with porcini mushroom risotto, stuffed or baked pasta, grilled meats, roasts and mature cheeses.
