Description
The Valpolicella Ripasso Classico Superiore of the Tenuta Santa Maria is located in Arbizzano di Negrar, in the classic area of Valpolicella.
The harvest of the Corvina Veronese, Corvinone and Rondinella grapes, which make up the blend, takes place after that of Amarone, in mid-October. The grapes are pressed, cold macerated and fermented at a controlled temperature for about 25-30 days. To take on greater structure and elegance, the wine performs a second maceration and fermentation on the intact Amarone marc according to the ancient "Ripasso" technique. Once the malolactic fermentation in oak barrels is completed, it spends 24 months in the same containers and refines for at least 6 months in glass after bottling.
At sight it is bright ruby red in color. Hints of cherry and blueberry spread over a spicy carpet made of licorice, cinnamon and pepper. On the palate it is soft and warm, with velvety tannins and a long persistent finish.
It goes well with meat-based main courses and medium-aged cheeses.
