Description
The Valpolicella Ripasso Classico Superiore Le Poiane is born in the selected vineyards of the Bolla company, located mainly in the locality of Jago and Crosara di Negrar, in the Verona area. This wine wants to represent the territory to which it belongs, highlighting the peculiarities of the soil.
It is mainly produced with Corvina, Corvinone, Rondinella and other authorized grapes, harvested late at full ripeness. At the end of February the wine is combined with the pomace obtained from the racking of the best Amaroni and proceeds with a new fermentation. Fermentation, with this typical and ancient practice of Ripasso, takes 15-20 days and gives the wine great complexity and very soft tannins. Subsequently, the evolution takes place, first in barrique, then in large barrels for about 12-18 months. It is refined in the bottle for about 3 months before being marketed.
It has an intense ruby red color. The nose shows an intense aroma of ripe grapes, to which spicy notes are added, with evident peppery sensations. In the mouth it shows a great body and a pleasant softness that give it finesse and elegance. The finish is harmonious and velvety, with a good persistence.
This wine is perfect for moments of meditation, it also goes well with important dishes based on grilled red meats and aged cheeses.
