Description
The vineyards from which Valpolicella Ripasso Classico Superiore La Casetta originates are those of the most beautiful hills of Negrar.
The harvest is carried out between the end of September and the beginning of October, therefore the must obtained from the pressing of the grapes ferments at a temperature between 25 and 28 ° C, with maceration on the skins for 12 days. A second fermentation follows with a review on the marc of Recioto, with which it remains in contact for 15 days. An aging of 18 months in cask and then in steel completes the process.
Concentrated ruby red with purple veins, it perfumes the nose of cherry and spices. It has a full-bodied and soft sip, with a remarkable degree of complexity that highlights notes of dried fruit.
Wine that prefers second courses of red meat, long-aged cheeses as well as game with an intense flavor.
