Description
The Valpolicella Ripasso Classico Superiore Biologico Domini Veneti is obtained from organically-run vineyards located on the highest hills in Valpolicella Classica.
With vineyards located on dry terraces between 150 and 450 meters above sea level and on silt-clayey soils, the grapes are harvested manually in early October, destemmed and crushed. Fermentation between 25 and 28 °C is accompanied by maceration with fulling every 3 days. The wine is then stored in steel until February, when the wine undergoes the 'Ripasso' technique by coming into contact with the Amarone skins for 15 days. A further ageing in wood and in the bottle follows.
Deep ruby red in colour, it has a complex nose with red fruits such as cherry and black cherry, vinous and spicy hints. On the palate it is harmonious, full and velvety, medium-bodied and with an attractive balance between tannins and acid component.
Perfect in combination with red meats cooked on the grill or braised, it can also worthily accompany elaborate pasta dishes based on mushrooms and truffles.
