Description
The Valpolicella Superiore di Roccolo Grassi rises in the Roccolo Grassi vineyard of the same name, where 8 out of 12 hectares are reserved exclusively for the production of this Valpolicella Superiore.
It is obtained from an assembly of fresh grapes and slightly dried grapes for about 20 days in equal proportions. The varieties that make up the blend are Corvina Veronese, Corvinone, Rondinella and Croatina. harvested at full polyphenolic ripeness during the first week of October. Vinification takes place in stainless steel at a controlled temperature of 25-28 ° C according to the vintage, with 15 days maceration on the skins. Once the malolactic fermentation in wood has been completed, the wine ages in French oak barriques and in barrels for 20 months, followed by a further 10 months of aging in bottle.
This Valpolicella Superiore signed Roccolo Grassi appears to the eye with a deep ruby red color. The nose brings elegant spicy notes of tobacco and white pepper that blend in a balanced way with the mineral ones, leaving space in the finish with aromas of cherry and small red fruits. In the mouth it is full-bodied and soft, with sweet tannins, fine and complex, with a strong personality.
It goes wonderfully with first courses seasoned with meat sauces. Also ideal in combination with aged cheeses, stewed and roasted red meats.
