Description
Fabiano's Valpolicella Classico Superiore originates from the hilly area of Valpolicella, in vineyards located in the municipalities of Negrar and S. Pietro in Cariano, north of Verona.
It is produced with Corvina Veronese and Rondinella grapes, with small additions of Molinara and Negrara grapes, which are harvested by hand and subjected to careful selection. The clusters undergo a soft pressing, after which they are dried and started to ferment which takes place in stainless steel tanks at a controlled temperature of 22 ° C for over 20 days. The wine ages for 8 months in Slavonian oak barrels and for a further 2 months in glass before being put on the market.
Fabiano's Valpolicella Classico Superiore has a dark red color with a purplish edge that tends to garnet with aging. The nose reveals a clear note of ripe cherry, completed by a slight spiciness. Harmonious on the palate, it presents an excellent balance between the tannic component and acidity.
Ideal with red meats and game, it goes beautifully with strong flavors and aged cheeses. Also recommended at the end of a meal.
