Description
Valpolicella Classico by Cesari is a red wine produced with a blend of Corvina, Corvinone, Rondinella and Molinara grapes. The vineyards that extend across different areas of Valpolicella Classica, in Veneto, are cultivated on calcareous soils of alluvial-moraine origin.
Production begins with the harvest of the grapes between September and October, followed by red vinification. The grapes macerate on the skins for 10 days to extract intense colors and aromas. The wine then undergoes malolactic fermentation and remains in stainless steel tanks for at least 4 months before bottling. After a short rest in the bottle, the resulting wine is ready for the market.
This wine has a ruby red color with purple reflections. The aroma is fresh and fruity, with evident notes of berries and cherry. On the palate it is dry, velvety and well-balanced, with a pleasant harmony between acidity and tannins.
This Valpolicella Classico is the ideal accompaniment to pasta dishes with meat sauce.
