Description
The Valpolicella Classico Superiore di Zýmé is born in vineyards located in the Veronese municipality of Negrar, in the extraordinary territory of Valpolicella.
It is produced with a skilful blend of Corvina, Corvinone, Rondinella and Oseleta grapes, harvested and selected by hand. The first fermentation which takes place in stainless steel tanks at natural temperatures is followed by a second fermentation on the skins of Amarone according to the traditional "Ripasso" method, for 14 days. Subsequently the wine ages in Slavonian oak barrels for 36 months and for another 6 months in bottle, before being marketed.
Valpolicella Classico Superiore di Zýmé has a ruby red color, developing garnet reflections with aging. The nose opens with an elegant bouquet of ripe cherry, morello cherry and slightly dried plums. On the palate it is soft and enveloping, with a good flavor and a finish characterized by notes of ripe fruit and spices.
Ideal in combination with cured meats and medium-aged cheeses, it is perfect to serve with soups and white meats.
