Description
The Valpolicella Classico Superiore of Tenuta Santa Maria originates from the hilly terrain of Arbizzano di Negrar, located in the classic area of Valpolicella.
The harvest takes place following that of Amarone, in mid-October. The grapes are pressed and cold macerated, after which the must ferments at a controlled temperature for about 25-30 days. To carry out the malolactic fermentation, the wine is transferred to large oak barrels where it rests for 12 months.
It presents itself to the sight of a beautiful bright ruby red. The nose offers intense floral aromas of violet combined with hints of cherry, blueberry and blackberry, accompanied by spicy perceptions of cinnamon, vanilla and pepper. On the palate there is a good freshness and its fruity taste that invite you to drink and give elegance and structure to the wine that closes on a long and persistent finish.
It goes perfectly with second courses based on red meat and medium-aged cheeses.
