Description
The Coyam is located in the biodynamic vineyards of the Los Robles di Emiliana estate, in the heart of the Valle de Colchagua.
It comes from a skilful blend of red berried grapes, with a prevalence of Syrah and Carmenère, harvested by hand between the months of April and May. Fermentation is carried out in stainless steel tanks, with maceration for 20-25 days. Following the malolactic fermentation, which occurs naturally in French oak barrels, the Coyam rises for 13 months in French and American oak barrels.
Intense purple color tending to ruby red, it brings a bouquet composed of notes of ripe black and red fruit, accompanied by hints of wet earth and vanilla. On the palate it is full and balanced, with a good structure and soft tannins.
It is perfect with roast red meat, pasta with sauce and mature cheeses. Try it with dried fruit.
