Description
Elio Ottin's Pinot Noir L'Emerico was born in the municipality of St. Christophe, in the province of Aosta. The soil, of a silty-sandy type with a notable presence of skeleton, is ideal for the Pinot Noir vine, which here expresses its full potential.
The manual harvest precedes fermentation in steel at a controlled temperature of 9-10°C. Subsequently the wine ages in French oak barrels for 18 months.
It presents a garnet red color to the eye. The olfactory bouquet is rich in ripe red fruits and leather notes. On the palate it is medium-bodied, round and velvety, with a pleasant tannic nuance in the finish.
It is ideal in combination with risottos, mushrooms and roasts, dishes that enhance its richness and aromatic complexity.
