Description
Sauvignon Blanc Emiliana is an organic wine produced in Chile in the Casablanca Valley.
The location in the coastal area makes this white grape variety predominant, which is affected by morning mists and winds in the afternoon. After harvesting, the grapes are destemmed and pressed to face the fermentation in steel and preserve all the varietal characteristics of Sauvignon Blanc. This is followed by an aging of 3 months on the fine lees in steel.
Light lemon yellow in color, it has mineral and citrus notes that recall grapefruit and lemon, with delicate returns of white pepper and dried herbs. On the palate it remains soft, with references to citrus fruits and a good balance between the acid note and texture. The persistence is medium-long for a pleasant and elegant sip.
It goes well with fish risotto, shellfish, sushi and fresh cheese based aperitifs.
