Description
This Soligo Extra Dry Prosecco is made exclusively from grapes from the vineyards located on the historic hill known as Col de Mez.
The grapes are harvested by hand in September. After a soft pressing, the must ferments slowly in steel with selected yeasts. The second fermentation takes place by autoclave refermentation according to the Charmat method.
Brilliant straw yellow, the nose offers a delicate bouquet of lime, lime and Golden apple, accompanied by a mineral breath. In the mouth it is fresh and citrus, in perfect balance with a slight sugary residue that gives a hint of sweetness and softness to the sip.
Excellent as an aperitif, it is the ideal companion for fried vegetables and smoked or raw fish.
