Description

Ius Naturae, or "nature law", is the pinnacle of the road towards the organic cultivation of Bortolomiol: a difficult and demanding choice that is rewarded by the most authentic expression of the Valdobbiadene terroir. A vintage Prosecco capable of highlighting the peculiarities of each vintage, with a different and well-defined identity.

It is obtained from a white vinification that begins with the soft pressing of the grapes. Fermentation takes place at controlled temperature with selected yeasts. The subsequent second fermentation is carried out with re-fermentation in a pressurized tank according to the Martinotti-Charmat method, for 25-30 days. Followed by 3 months ageing on the lees and another 2 months in bottle.

It has a straw yellow colour with a fine and persistent perlage. Delicious hints of apple and pear are felt on the nose, supported by an elegant mineral texture. The sip is clean and dry, with a long and harmonious aftertaste.

It enhances the taste of sweet molluscs such as scallops, but also recipes based on asparagus and fish carpaccio.
