Description
Borrigiano is the first wine from the Il Borro winery to obtain the Valdarno di Sopra DOC appellation and organic certification.
It is obtained from bunches of Sangiovese, Syrah and Merlot, harvested at the right degree of ripeness and subjected to a cooling phase in wooden vats aimed at preserving the quality and aromatic complexity of the individual varieties. The must ferments at a controlled temperature of 28 °C. A 10-month ageing follows in large wooden vats.
It has a ruby red colour with purple reflections. The scent is characterized by fresh hints of cherry, white pepper and ginger. On the palate it is clean and fresh, with elegant tannins to give a pleasant gustatory harmony.
Excellent to be served at a slightly cooler temperature as an aperitif, it is the ideal companion for light red meats, traditional Tuscan soups (e.g. ribollita, tomato soup) but also medium-aged cheeses.
