Description
The Cervaro della Sala dei Marchesi Antinori was born in vineyards located in the land surrounding the Castello della Sala, located in Umbria. The name derives from the noble family who owned the castle in the 14th century, the Monaldeschi della Cervara.
It is mainly produced with Chardonnay and Grechetto grapes, harvested overnight and refrigerated to preserve its aromas, before pressing and destemming. The two varieties ripen in different periods, are fermented and refined in a different way. Chardonnay is briefly cold macerated for 4-6 hours, then fermented for 18 days in new French oak barrels, where it remains on its lees for 6 months. The Grechetto, on the other hand, ferments and ages in stainless steel. The wine is then assembled and, once bottled, it rests for 10 months in the historic cellars of Castello della Sala.
It has a bright straw yellow color with greenish reflections. The nose opens with toasted notes and fruity nuances of citrus and exotic fruits, with slight sensations of butter. On the palate it is savory and fresh, with a long and persistent finish. Pleasant immediately, it has excellent evolutionary potential.
Perfect to accompany hot appetizers based on fish and vegetables, it is ideal in combination with first courses with fish sauces, vegetables and mushrooms. Excellent also with stewed fish, white meat, both grilled and stewed, and game.
