Description
The Cembra Pinot Noir is born in the Valle di Cembra vineyards, in the heart of Trentino Alto Adige, located at an altitude of 500-600 meters above sea level
It is produced exclusively with Pinot Noir grapes, harvested only by hand at the end of September-beginning of October. After a few days of cold maceration, fermentation takes place in amphorae, wooden barrels and steel tanks with frequent punching down. The wine is then aged in small French oak barrels for 12 months.
It is characterized by an intense ruby red colour. The nose opens with a bouquet of black and red fruits, licorice and black pepper. On the palate it is full and well structured, with soft and pleasantly persistent tannins.
Excellent in combination with pasta with classic meat sauce, cured meats and semi-mature cheeses.
