Description
The Teroldego Rotaliano of the Bottega Vinai of Cavit line is a red wine made in the portion of the Campo Rotaliano falling within the municipality of Mezzolombardo, north of Trento. The vineyards are cultivated on gravelly alluvial soils of glacial origin from the Noce stream that preserve the characteristics of the hilly soils.
The must is vinified in red, with maceration on the skins in steel containers for at least 8-10 days. The wine ages partly in barrique and partly in Slavonian oak barrels for only 6 months, so that the tertiary scents of the ageing in wood do not overpower the varietal aromatic notes.
In the glass it has an intense ruby colour with purple flashes. The olfactory profile is characterized by fragrant fruity aromas of raspberry, blackberry and berries, with ethereal hints developed during the period of evolution. In the mouth it is balanced and full-bodied, with a velvety, austere and enveloping sip.
It enhances polenta-based dishes, mixed grills and meat stews, such as the typical Tonco del Pontesel Trentino.
