The Touraine Sauvignon Blanc Vieilles Vignes LaCheteau, from the Val de Loire in France, exemplifies the mastery of making wines from old Sauvignon vines. The region is renowned for its ideal climate and soil which gives the wine distinctive characteristics.
The winemaking process uses pneumatic pressing combined with fermentation in stainless steel tanks at a controlled temperature. Fermentation starts at 10°C and gradually increases to 16°C. When the alcohol/sugar balance reaches the optimal point, the cold fermentation is stopped, and the wine is subsequently kept on the fine lees.
It stands out for its bright and luminous color, with light golden reflections. On the nose, it reveals a bouquet of exotic fruits and white flowers. On the palate, it offers a crunchy and aromatic attack, with a nice balance between power and freshness.
