Description
The rosé sparkling wine Bollamatta by Bibi Graetz is born in vineyards located in the municipality of Fiesole, in the hills overlooking the wonderful city of Florence.
It is produced entirely with Sangiovese grapes, carefully picked and selected by hand. After contact with the skins for 4-5 hours, the must ferments in stainless steel tanks at a controlled temperature, while the sparkling process is obtained using the Charmat method. The wine ages on its lees for 2 months before being bottled.
It has a soft pink color and opens to the nose with hints of red fruits, cherry and strawberry, enriched by delicate citrus notes. In the mouth it is fresh and creamy, with a savory and balanced finish.
Perfect to accompany appetizers of croutons and fish, vegetarian first courses and sushi.
