Description
Schidione is a wine that comes from Jacopo Biondi Santi's desire to compete in the creation of a Supertuscan that lives up to the name that his family has managed to build in the history of Brunello. It is a wine with a profound evocative capacity and an aristocratic character.
It originates from the encounter between the Sangiovese Grosso of the BBS11 strain (Brunello Biondi Santi, vine n ° 11) with the international vines Cabernet Sauvignon and Merlot. The vinification takes place separately for the individual varieties, with a prolonged maceration of 18 days and malolactic at the end. The wines are raised in French oak barrels from Tronçais for 24 months and, after being rejoined in the blend, they remain for another 6 months in stainless steel vats.
In the glass it has an intense ruby red color with garnet reflections. A complex spiciness with an elegance trace of vanilla dictate the pace to the nose. The entry into the mouth is soft and powerful, followed by a velvety and fleshy center-mouth and a finish of long persistence.
It is an extremely long-lived wine, capable of maintaining its shape for 40-50 years. As the name suggests - "schidione" is the spit used to skewer game to be cooked in the Middle Ages - it is a wine particularly suitable for pairing with furred game, roasted or not, and with important red meat dishes. Alternatively, you can accompany a good platter of aged cheeses.
