Description
The Tuscany Sangiovese Polissena of the Il Borro estate was born in vineyards located on the hills of the Valdarno area, in Tuscany, at the foot of the Pratomagno.
It is produced exclusively with Sangiovese grapes, harvested and sorted entirely by hand. The grapes are left to macerate on the skins for 22 days in steel vats at a controlled temperature of 28 ° C and the alcoholic fermentation lasts about 10 days. The wine is then placed in second passage Allier oak barriques, where it rests for 12 months and carries out malolactic fermentation. Subsequently, it is decanted into steel vats for 30 days, then filtered and bottled. Before being marketed, it rests in the cellar for another 6 months.
It is a wine with an intense ruby red color. The bouquet is rich and decisive, with pleasant undergrowth notes and hints of red berry fruit. On the palate it is dry and full-bodied, with tannins present but pleasant.
Perfect to accompany red meats, cold cuts and aged cheeses, it is excellent in combination with game dishes. Particularly suitable with hare, wild boar, Chianina and Cinta Senese.
