Description
The Rapace is produced by Podere Uccelliera. The cellar is located on the slope of the Castelnuovo dell'Abate hill overlooking the ancient volcano of Monte Amiata. The company was founded in 1986 by Andrea Cortonesi, son of local sharecroppers, guided by his vocation for viticulture and his peasant education based on hard work and respect for the land. The vineyards, from predominantly clayey and sandy soils with a strong presence of loose skeleton, are located at an altitude of approximately 150, 250 and 350 meters above sea level in the Castelnuovo dell'Abate area. Voliero was born from the experience gained over the years by Andrea Cortonesi and from the desire to enhance the different terroirs of Montalcino.
Rapace is produced from a blend of Sangiovese, Merlot and Cabernet Sauvignon grapes. The grapes are vinified together in thermo-controlled steel tanks with maceration for a few days. The refinement takes place in French oak barrels of various toastings for at least 12 months, followed by refinement in the bottle for 6 months.
Garnet red in colour, the wine opens on the nose with balsamic aromas of myrtle and Mediterranean scrub. The sip is structured, warm and with silky, long-lasting tannins.
To be paired with grilled red meats, stewed meats and mature cheeses
