Description
The Toscana Rosso Pian di Nova of the Il Borro estate is born in vineyards located on the hills of the Valdarno area, in Tuscany, at the foot of the Pratomagno.
It is mainly produced with Syrah and Sangiovese grapes, harvested and sorted manually, then de-stemmed and crushed before vinification by natural fall which takes place separately for each variety. The grapes are left to macerate on the skins in steel vats for 20 days at a controlled temperature of 26 ° C and the alcoholic fermentation lasts about 10 days. The wine is then placed in Allier oak barriques and, after malolactic fermentation, the different wines are assembled. The wine ages in barriques for 6 months, after which it returns to the steel vats for 1 month before filtering and bottling, then rests in the bottle for another 6 months.
Pian di Nova is a ruby red wine with violet hues. The nose opens with intense aromas including pleasant spicy notes and nuances of red fruits. In the mouth it is full-bodied, with present but soft tannins. Good persistence, with a fruity and spicy finish.
Perfect to accompany semi-mature and sliced cheeses, it is ideal in combination with first courses and risotto with meat and mushroom ragout. Also excellent with white meats and fish and with many dishes of Indian, Thai, Chinese, Japanese and Korean cuisine.
