Description
Libertà is a red wine produced in Tuscany, composed of a blend of Merlot, Cabernet Sauvignon and Cabernet Franc. The name Libertà derives from a gift made by the city of Florence in 1376 to eight families, including the then owners of the Collazzi estate, for their value in defending the freedom of the city.
The harvest is manual, with the vineyards located a short distance from the cellar, ensuring short times between harvesting and processing. Each variety and parcel is harvested and vinified separately, with a careful selection of the bunches. The alcoholic fermentation takes place at a controlled temperature of around 25°C in stainless steel, followed by malolactic fermentation. The refinement lasts 12 months in barrels and tanks, followed by 6 months in the bottle.
The color is an intense and lively ruby, typical of the varieties used. The aromas are of ripe fruit. On the palate, the wine is enveloping with sweet tannins, leaving a sensation of exemplary balance. It's complex and long without being impetuous.
It pairs perfectly with red meat dishes, roasts and mature cheeses.
