Description
In the rolling hills of the Greve in Chianti region, lies the Tenute del Cabreo, the birthplace of the illustrious Toscana Rosso Cabreo Il Borgo. This exceptional wine is the result of a happy marriage between Sangiovese grapes, celebrated for their elegance and flavour, and Cabernet Sauvignon grapes, prized for their roundness and concentration, an inspired innovation that took shape in 1985.
Hand-picked in the second half of October, the Sangiovese grapes are joined by their Cabernet Sauvignon counterparts, harvested in the first half of the same month, to begin their journey towards vinification. The grapes are fermented at the Tenute del Cabreo winery in stainless steel vats at a controlled temperature of 28 °C for both varieties. After maceration on the skins for 15-18 days, the wine undergoes malolactic fermentation in temperature-controlled stainless steel vats at a temperature of 22-23 °C. After this process, the two grape varieties are artfully blended and aged in French oak barrels, some of which are new, with decanting every 3 months, for a total of 16-18 months. The wine is the bottled and left to mature for a further 6 months.
It has a bright ruby red colour and a noble and full bouquet. The taste is aristocratic and velvety, with hints of undergrowth and nuances of leather and raspberry.
Perfect with roast meats and game, it is recommended with mature cheeses.
