Description
Toscana Rosso IGT Gimas is a blend produced with Cabernet Sauvignon, Syrah and Sangiovese grapes grown in areas of the Maremma rich in clayey soils, silt and fine skeleton.
After harvesting between the second and fourth week of September, fermentation takes place in small wooden barrels before the malolactic fermentation in 2nd or 3rd passage tonneaux is started. This is followed by an ageing period of 16–18 months in barrels previously selected using the so-called 'Pyramid of Gimas' and a subsequent ageing in bottle for at least 8 months.
At sight it shows a very deep red and of great consistency. Notes of cassis and tertiary aromas of nuts, sweet tobacco and vanilla express a complete and impressive nose. On the palate, it unfolds silky tannins with a recurring hint of cherry in alcohol, a good structure and excellent persistence.
Ideal as an accompaniment to red meats, game, aged cheeses and cold cuts.
