Description
Coevo is a wine from the Cecchi company which represents the expression of two important territories: Castellina in Chianti, for Sangiovese and Cabernet Sauvignon; and the Tuscan Maremma, for Petit Verdot and Merlot. This wine is a tribute to the Cecchi family's winemaking history, combining the legacy of the past with a clear vision of the future.
The alcoholic fermentation takes place in steel at a controlled temperature between 25 and 30°C, maintaining contact with the skins for two weeks. After this phase the wine matures for 18 months in barriques and tonneaux and subsequently refines in the bottle for over 12 months. This long maturation gives the wine structure and complexity, making it suitable for long aging.
On the nose, Coevo offers a harmonious bouquet with enveloping dark fruits that intertwine with spicy notes. On the palate, Sangiovese and Merlot give freshness and ripe tannicity, creating a perfect balance. The result is an elegant and long-lived wine, with great aromatic depth and a pleasant persistence.
This red wine pairs perfectly with grilled red meat dishes and mature cheeses, enhancing the complex and intense flavors of the dishes.
