Description

Il Cavaliere is a Toscana IGT produced exclusively from Sangiovese grapes selected in the company's vineyards, harvested when fully ripe. This wine is the result of a harvest that takes place between the last week of September and the last week of October, coming from the Vignanova and Torre vineyards.

The winemaking takes place with fermentation in 30 hl non-vitrified concrete vats, using 30% whole bunches, and maceration can extend until January of the following year. Attention to maturation allows for prolonged maceration, using indigenous yeasts and manual punching techniques. The refinement continues in cement for 18 months.

On the nose, "Il Cavaliere" offers a rich and complex bouquet, with evident notes of ripe cherry, plum and hints of spices and tobacco. The structure is enveloping, exhibiting a perfect harmony between acidity and soft tannins, which evolve towards a persistent and elegant finish. Its olfactory complexity integrates beautifully with a visual appearance of an intense ruby red, tending towards garnet with aging.
