Description

Cantico is produced with Merlot grapes from the historic 1981 vineyard.

The grapes grow on soils rich in clay and limestone and during the month of August the thinning of the bunches is practiced to allow greater aromatic concentration. After manual harvesting, the wine ferments for 15–20 days at controlled temperatures to then matures a year in French oak barrels. A further ageing in the bottle for 48 months follows before being put on the market.

Intense ruby red in color, it is a wine with elegant notes of plum and cherry interspersed with refreshing hints of mint and Mediterranean herbs. On the palate, it has a medium body with good minerality and smooth tannins. A structured wine, with a balanced and harmonious palate, it is suitable for long ageing.

Ideal as an accompaniment to grilled and stewed red meats, it is excellent with dishes based on polenta and sausages.
