Description
The Toscana Rosso Cabreo Black by Ambrogio and Giovanni Folonari was born in the vineyards of the Tenute del Cabreo, located on the hills of Panzano del Chianti.
It is produced with pure Pinot Noir grapes, harvested at the end of September and fermented in stainless steel vats at a controlled temperature of 20 ° C, with pre-fermentation maceration for 7 days at 0 ° C. The malolactic fermentation takes place in thermo-conditioned stainless steel containers at 22 - 23 ° C. The wine then matures in non-new barrels for at least 12 months and refines in the bottle for another 12 months before being placed on the market.
Cabreo Black has a ruby red color. The bouquet is rich and complex, with sensations ranging from undergrowth fruit to cinnamon, enriched with spicy nuances of black pepper. On the palate it is full, with an extraordinary aromatic-olfactory persistence and delicate tannins.
Excellent to accompany savory first courses with meat sauce, it is ideal in combination with red meats and aged cheeses.
