Description
The Parva Domus by Vallepicciola is an elegant Cabernet Sauvignon produced exclusively with grapes selected from the Casuccio vineyard in Castelnuovo Berardenga.
The winemaking involves alcoholic fermentation and maceration for approximately 20 days in cement tanks at a controlled temperature, followed by malolactic fermentation in French oak barriques, 50% of which are new. Aging continues in barriques for approximately 16 months, using 70% new barriques and 30% second passage, with subsequent refinement in the bottle for 8-10 months.
The wine has an intense ruby red color. On the nose, soft vegetal notes emerge combined with black fruit, enriched by floral and spicy nuances. On the palate, its initial astringency quickly transforms into an explosion of character, with a long persistence that underlines its quality.
Excellent accompaniment for fatty red meats, such as rump, loin and sirloin steaks, as well as grilled lamb and mature cheeses.
