Description
Olmaia is an organic red wine produced in Montalcino, on the hill of Sant'Angelo in Colle by the Società Agricola Col d'Orcia. The grapes come from vineyards located at an altitude of 350 meters above sea level, with a south-southwest exposure. The Cabernet Sauvignon vines, selected for their Bordeaux clones, are cultivated with great care to obtain a high quality product.
Fermentation takes place in steel vats, with a 12-15 day maceration at a controlled temperature, followed by malolactic fermentation in steel. The refinement takes place for 24 months in medium toasted French oak barriques and a short passage in American oak, with a natural stabilization process in the winter cold. After bottling, the wine is left to refine further in the bottle.
It has an intense ruby red color. On the nose it releases notes of red fruits, integrated with classic hints of the grape variety and a spicy bouquet with a prevalence of vanilla. On the palate it is characterized by ripe tannins, a pleasant freshness and a balance between red fruits and spices, with a long, vigorous and fine aftertaste.
It pairs ideally with grilled red meats and mature cheeses, enhancing their flavours with its structure and complexity.
