Description

Romitorio's Toscana Bianco Metafisica represents an innovative interpretation of the blend between Chardonnay grapes coming from a small vineyard facing north-west in the Montalcino area, and Procanico grapes coming from the vineyard of the Scansano estate in Maremma.

The winemaking process involves maceration of the must on the skins for 48 hours at low temperatures, followed by gentle pressing and further cooling for 48 hours. The must is sent to ferment and matures in barrique for 9 months, followed by further refinement in the bottle.

It has a straw yellow color. The nose offers elegant hints of yellow flowers, ginger and saffron. The taste is characterized by a splendid liveliness and a perfect balance between minerality and freshness.

Perfect to accompany refined and structured dishes, it goes well with seafood cuisine, vegetarian dishes and delicate cheeses.
