Description
The Toscana Rosso Insoglio del Cinghiale of the Biserno estate is born in vineyards that extend in the western part of the Alta Maremma, in Bibbona.
It is produced with Syrah, Cabernet Franc, Merlot and Petit Verdot grapes. Fermentation takes place in stainless steel tanks at a controlled temperature of 28 ° C for 21 days. The malolactic fermentation takes place partly in barrique and partly in steel tanks. Subsequently the wine is aged for 4 months in barrique, and for a further 3 months in bottle.
The Insoglio is characterized by an intense ruby red color. The nose opens with a very fleshy bouquet, with intense peppery notes, enriched by pleasant fruity hints of cherries and blueberries, and delicate nuances of aromatic herbs. On the palate it is fresh and elegant, with well-smoothed tannins and a pleasantly balanced acidity.
Perfect to accompany cold cuts and salami, it is ideal in combination with game, roasts and aged cheeses.
