Description
Passicato is a red wine obtained from a blend of autochthonous overripe grapes from the vineyards of south-eastern Sicily.
The grapes left to overripe on the plant are harvested by hand in small boxes. The must ferments in steel for 10 days at a controlled temperature of 24-26 ° C. Following malolactic fermentation, it matures in the same containers and further in the bottle before being marketed.
Symbol of fire and passion, it shows an intense ruby color with purple reflections. It gives the nose mellow notes of black cherry and red fruit jam, with clear references to blackberries and sweet spices. In the mouth it is balanced and warm, incredibly consistent with the sense of smell.
Suitable in combination with salami and medium-long matured cheeses, it can be appreciated in the company of spicy foods and red meats or as a meditation wine.
